Bacillus subtilis natto (B. natto) is a relatively strong producer of alpha-amylase. Alpha-amylase is an enzyme that breaks down complicated sugars such as starch to simple sugars. It is these smaller sugar units that are absorbed via the gastrointestinal tract and used by the body.
B. natto may assist the digestion of starches after they pass through the stomach as it has been shown that B. natto survives a pH of 2 (as can be found in the gastric juices) for 120 minutes at a rate of 85.95%.
Research also shows that B. natto tolerates bile salts at 0.3% as found in the small intestine with a survival rate of 84%.
The ability to pass through the stomach and survive in the small intestine are key prerequisites for the suitability of a microbe to be used as a probiotic.
